Role Overview

The purpose of this position is to manage current food safety practices at DM Harborside; research and communicate sourcing information of products; and develop new products and business expansion opportunities for DM Harborside. The Food Safety and Business Development Manager will manage the food safety of DM Harborside facilities and products, including but not limited to the Quarterdeck.

 

Traceability and environmental impact of products is important to DM Harborside; the Food Safety and Business Development Manager will be responsible for researching and providing  customers with information regarding the sourcing and ingredients of each product. Food Safety and Business Development Manager will also work to source new products in line with these goals through research and data.

 

As a community-focused business, DM Harborside is committed to giving back to the local community, to include mentorship and/or work-based learning opportunities for young people, which the Food Safety and Business Development Manager will take part in. As part of a small, locally-owned business, the candidate will be expected to fulfil additional tasks outside of the general role of Food Safety and Business Development Manager. This includes Quarterdeck front of house work, serving food and alcohol, taking payments, maintaining basic hygiene standards of the storefront, and assistance in running tasting and private events as needed.

 

Role Duties and Responsibilities

Food Safety

  • Maintain high standards of food safety and cleanliness in line with legal regulations

  • Write Hazard Assessment and Critical Control Points (HACCP) for retail areas and food production facilities

  • Design workspaces

  • Create public health protection plans

  • Practice food/ingredient labeling in compliance with state/federal regulations

Food Production and Product Development

  • Develop nutrition statements for products

  • Develop and test new products, including baked goods and niche market products, such as vegan and gluten free products

  • Troubleshoot issues within product development process

  • Educate customers on traceability and environmental impact of products

Business Development

  • Develop business plans for a bakery to supply the Quarterdeck and future locations

  • Determine facility and equipment needs for additional locations and/or business expansion

Community Engagement

  • Develop and manage a work-based educational program for high school or college-aged individuals

  • Mentor internships and/or job shadow experiences

 

Minimum Qualifications and Experience

  • Bachelor’s degree in Food Biosciences, or a related field

  • HACCP training

  • 5 years of commercial kitchen or bakery experience

  • 3 years of experience in food safety

  • Background in food product development

  • Experience with standardized and regulated food packaging practices

  • Customer service driven

  • Ability to engage with customers on local foods and beverages served on premise

 

Preferred Qualifications and Experience

  • Experience and familiarity in production and food safety practices of vegan food

  • Experience in food product development, including sourdough products

  • Experience in production of bread and other baked goods

  • Interest in local food production, sourcing, development, and promotion

  • Experience working with food traceability

  • Product management and logistics experience

  • Familiarity with small business management

  • Interest in mentoring young people

  • Experience in developing educational programs and working with children and teenagers.

 

Additional Requirements

  • MAST (Mandatory Alcohol Server Training) Class 12 permit, Washington State Food Handlers permits. The candidate has 30 days from hiring to obtain these documents.

  • Ability to stand, walk, and be on one’s feet for long periods of time

  • Ability to lift and carry supplies of about 50 pounds using proper tools and practices
